Tanya’s Beet Burgers
Makes 6-8 depending on the size
Turn on oven at 180
750 ml grated beetroots (approximately 4-5 beets)
150g rolled oats
1 onion (sweat before adding to the mix)
2 cloves garlic
2 tbsp extra virgin olive oil
1 handful fresh basil
Pinch of chilli flakes
salt & pepper (lots of pepper)
Toppings: lettuce, mango, avocado, tomato, onions
Peel and grate the beetroot and garlic. Finely chop the onion and saute.
Place the beetroot, garlic, onion, oats, chilli, olive oil, eggs and mix well. Add the feta, basil and season well. Set aside for 30 minutes so that the oats can soak up the liquid.
Form 6-8 patties with your hands – if the mixture doesn’t hold together then add more oats.
Bake for 30 mins
