4 tins of chick peas
4 medium onion finely diced
4 garlic cloves grated
2 eggs beaten
Flour/ flour substitute
Fresh parsley chopped
Fresh Coriander chopped
Juice of half lime
Zest of one lime
Salt & pepper
Fry the finely chopped onions and garlic on a low to medium heat until soft.
Add the cooked onions to the chick peas, egg, flour, parsley, coriander, cumin, lemon juice, lime zest, some salt and pepper in a food processor and blend on a low speed. The mixture should remain slightly chunky.
Transfer to a bowl and taste the mixture and adjust the seasoning if necessary.
Lightly coat a baking tray in veg oil, adding the falafel mix aprox a heaped teaspoon for each falafel.
Leave in the oven for 15mins, once going brown you can turn and flatten the falafel to make both sides crispy.
