Cucumber Ribbon Salad
This salad is a delicious and hydrating accompaniment to any meal.
1 organic cucumber
For the dressing
4 tbsps Extra Virgin Olive Oil
2 tbsps apple cider vinegar
Half tsp sea salt ,whisked together in a bowl
Slice the cucumbers thinly lengthways with a mandolin or a vegetable peeler
Arrange on a plate or platter and sprinkle with the herb of choice. Drizzle the dressing over.
This salad goes well with the Thai coconut chicken and rice.
