Broccoli is a great source of vitamins K and C, a good source of folate (folic acid) and also provides potassium, fiber. Vitamin C – builds collagen, which forms body tissue and bone, and helps cuts and wounds heal. Vitamin C is a powerful antioxidant and protects the body from damaging free radicals. This salad is simply packed full of goodness! The beauty of salads is that they’re a great way to use up those remaining bits of veg in your fridge.
Ingredients:
Broccoli
Red pepper
Red onion
Sun-dried tomatoes
Olives
Buckwheat
Basil
Olive oil
Seasoning
Paprika
1 clove of garlic (crushed)
Method:
Roast the broccoli, red pepper and red onion in a coating of olive oil, seasoning and paprika at 190ºC for 8-10 minutes.
Toast the buckwheat in a dry pan until browned & add to the roasted vegetables.
Stir in the sun-dried tomatoes, crushed garlic, olives, & basil.
