Beetroot and Orange Salad

Here is a recipe from our menu here at the Cliffs of Moher Retreat. It’s one that we serve on our retreats!

2 large beetroot grated

1/2 orange thinly sliced

100g sundried tomatoes halved

1 carrots sliced with peeler

100g of feta cheese

Hand full of baby leaf spinach


Sunflower seeds dry fried


Juice of 1/2 lemon

1 Table spoon of cider vinegar

1 Tbsp of honey or other sweetenerbeetroot orange salad


Combine all prepared ingredients in a bowl and mix.

Make the dressing, tasting it before adding to the bowl

Add the spinach, nuts and seed in last.
