2 Large Aubergine cut chunkily
2 tins of Chick Peas
600g Tomatoes diced
4 red/yellow Peppers diced
4 medium onions diced
3 Cloves of Garlic finely chopped
2 tsp Cumin
1 1/2 tsp Cinnamon
Handful fresh Basil
Handful fresh Coriander
Salt and pepper
Chilli to taste
1 dessert spoon of Honey or other sweetener
Juice of 1 lemon
Add the prepared onions and peppers to a pot with oil on a medium heat and stir regularly for about 5 mins.
Add the aubergine to the pot and cook for about 10-15 mins before adding the chopped tomatoes.
Flavour the tagine by adding salt, honey, spices and lemon juice.
Add some chilli and leave to simmer for 15 mins and adjust the flavouring as necessary.
Add basil with the chick peas about 3-5 minutes before serving.
